That is a very good point.|||You can get it, but you are right, bone in skin on chicken is better.
The bone has a lot of flavor that cooks into the meat during roasting and the skin fat melts and keeps the meat moist.
To me, whole anything is better than cut up with bones removed.
I roast the chicken on the bone, skin on and then peel the skin off to eat or use the chicken in recipes.
